Here’s our recipe of the month, Earl Grey tea loaf
Put the raisins, sultanas and cranberries in a large bowl and pour in the hot tea. Mix well, cover and leave to soak for an hour.
Stir in the sugar, lemon zest and juice, and eggs. Fold in the flour, spice and salt. Turn the mixture into a greased and lined 2lb/900g loaf tin, and bake in a preheated oven at 170°C for about 45 minutes until the loaf is well risen and rm to the touch.
