TURKEY sandwiches and turkey curry might be the first things you think of when it comes to using up Christmas leftovers – but there are lots of other delicious dishes you can create with leftover turkey. Try a spicy stir-fry, made with garlic, root ginger, chilli, spring onions and beansprouts fried in sesame oil. You could also add other vegetables that need using up, such as carrots, cabbage or mushrooms. Serve with noodles and soy sauce or sweet chilli sauce.
