Thai king prawn & cod flakes with mixed vegetables.

RICHARD Alsop was introduced to cooking Thai food after a close friend bought him a fantastic book one Christmas. This dish is his favourite to cook and its his adaptation of a traditional dish from northern Thailand called “Goong Pad Noh Mai”, which translates as asparagus with prawns. Richard says: “It is quick, cost-effective, healthy and so delicious. “It’s also low carb, so not bad for the waistline but for the rebels out there the dish is perfectly accompanied with steamed rice.”
